Weekend Re-Cap

What did you guys do this weekend?? 

Friday, I had a half day at the office… we were going to go to the Children’s Museum in St. Paul, but decided against it. We will wait until this cray cray flu season is over and done with!!! 

So instead of the museum, I went to lunch with a couple of co-workers and then went over to my Parents’ house, where B was hanging out for the day. It was remarkably warm for January in Minnesota {I believe we almost hit 40!} Image We had to take advantage of the beautiful Minnesota winter weather… and, of course, spent a good chunk of time on the 4 wheeler! B LOVES this thing and I can always get a pic of the kid smiling on this thing. And let me tell you, this is a feat!!!! He smiles a lot, but in pictures? Not so much. 😛

After gallavanting around my Parents’ house, we headed home to catch up with Daddy P. He was sealing his new taillights…check out these bad boys… ImageWhat do you think of those sick taillights? Aren’t they sick? Did I mention how much I think they’re just, well, sick?! {sick=awesome} So he was busy sealing these sick lights up when we got home … and then when he finished one {it was a longer process than he had expected!} we hit the road to pickup something I had purchased earlier that morning. It was a surprise for Daddy P & B! Guess what it was?!

A NEW TV!!! WHOOP WHOOP! We still had one of those old, non-HD, HUGE CRT TVs…yeah, I know…gross. See the one on the left? Image

So anyway, I came upon a good deal that I just couldn’t pass up. I didn’t even consult Daddy P!! hehehehehe He was happy with the surprise! We now have this in that left spot!Image

This is a stock photo b/c I didn’t even have a chance to take a pic of the new addition to our family yet! Oops! Anyway, it’s a huge improvement, now we just need to get it mounted on the wall and it will be SO awesome!!! 🙂 

Saturday morning started with some cookie baking! My best helper was at it again…ImageWe tried a new recipe and I think it was a pretty good one!!! I was HUGELY impressed with the taste right out of the oven/warm… they are still pretty good after cooling off, but they were SUPERB warm. I wonder if you can warm them up….meh, kinda weird.

Yogurt Chocolate Chip Cookies

  • 1/2 cup packed brown sugar

  • 1/2 cup white sugar

  • 1/4 cup margarine or butter {i used butter}

  • 1/4 cup shortening {i used margarine}

  • 1/2 cup plain nonfat yogurt {i used greek yogurt}

  • 2 teaspoons vanilla extract

  • 1 3/4 cups all-purpose flour

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 2 cups semisweet chocolate chips


  1. Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  2. In a medium bowl, cream together the brown sugar, white sugar, margarine and shortening until light and fluffy. Stir in yogurt and vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until incorporated, then mix in chocolate chips. Drop by rounded teaspoonfuls 2 inches apart onto the prepared cookie sheets.
  3. Bake for 8 to 10 minutes in the preheated oven, until the edges begin to brown. Cool for a minute on the cookie sheets before removing to wire racks to cool completely.

I loved that they were egg-less and had yogurt in them. I doubled the recipe so there was enough for my Mom and Dad to take home with them, and for us to keep also. It was a great amount of cookies and we are still enjoying them! If you try this recipe, please let me know what you think!!!

My parents came over and my Dad and Daddy P switched out the fan/light in our bedroom and finished installing the under-cabinet lights in our kitchen. It is SO awesome…let me tell you!!!


While the boys were busy, my SUPERMOTHER completed MORE of our never-ending laundry… and we, of course, had time to play with some blocks! 


I love watching him play by himself. I can just see those gears in his little head working hard!!!! 🙂 

Yesterday was a complete chill day. It’s FREEZING here in Minnesota {negative temps, people!!!}. Daddy P was brave and went ice fishing!!! {if he wasn’t in a fish house, he would have been considered clinically insane!}

 ImageThey only caught one fish between the 2 guys fishing and there she is… isn’t she a beaut? lol lol 26 in of teeth and slime. 😉 I’ve never pulled as big of a northern through the ice as that one!!! Good fishin’ Daddy P!

B and I just hung out at home, in the warmth of our house {Thank goodness we have a home with heat!!} and had a picnic lunch in the living room and cuddled with Lexxi a bit.Image

She is such a good dog. Really. B loves to give her treats and is always reminding me that we need to get her more of those “big ones”. Good thing he’s looking out for her!!

Daddy P is at home with B today… as he gets MLK day off from work. I wish I were home with those 2 today… but someone’s gotta put food on the table. 😉 

Hope you all had a wonderful weekend… I’m looking forward to the next one already. And then the following weekend, we are off to Chi!!! Whoop Whoop!
